Coconut Lime Cake
A vegan layer cake with the bright flavors of summer! This fluffy coconut cake, topped with vegan cream cheese frosting, crispy coconut streusel, and filled with zesty lime curd is sure to impress.
There are some recipes that just speak to us when we are thinking about creating them. This was one of those recipes. I remember Taylor texting me first thing in the morning that she had had a dream about a coconut lime cake and she could envision it so clearly! Sometimes Tay and I have these great ideas for a recipe, but then when it comes to actually making it, it will need some extra tries to get it just right. So, the first time we got together to bake this cake (aka Taylor is baking and I am drinking coffee and chatting with her) we didn’t think it would be ready to go for the blog so quickly. However, this recipe was so perfect the very first time Taylor went to write down the ingredients and put everything together! I was so in awe of her ability to do this and the cake itself!
This Coconut Lime Cake has so many incredible pieces to it and feels like one of the most intricate bakes goods I have ever made. However, it is so incredibly simple to put together! It presents like a fancy cake you may get at a bakery, so it would make the perfect dessert to bring to a birthday or special event! Or, as I always like to say, any dessert can be just for a weekend when you’re having a sweet tooth or in the mood to bake something!
I had such a blast taking pictures of this cake! For an obvious reason, this cake is so beautiful so I felt so excited and proud to capture this amazing creation of Taylor's. As well, this was the first time we had our partners with us while we took photos for the blog. My husband and Taylor's fiancé have both helped us out by taste testing our recipes before we post them. We especially love to all get together when Taylor and I are working on cocktail recipes like our Cold Brew Cocktail or Pink Lemonade Rose Sangria.
However, we wanted their help with the photo taking portion because this is the first recipe we have created that has so much height to it. So, we needed them to hold up our backdrop while I took pictures of Taylor piecing this masterpiece of a cake together! We had so much fun all working together, but I also felt strangely nervous since I hadn't had anyone other than Taylor with me while taking our blog photos!

Coconut Lime Cake
Yield: 1 cake
Prep time: 25 minutes
Bake time: approximately 20 minutes

· 2 cups all-purpose flour
· 1 tbsp baking powder
· ¼ tsp salt
· 1 cup vegan milk (I use unsweetened cashew milk)
· 1 cup granulated sugar
· 1 tsp vanilla
· 2 tsp coconut extract
· ¾ cup vegetable oil (or any other neutral tasting oil)
· 2 tsp lime zest
· 3 tbsp lime juice
· ¼ cup white corn syrup
· ¾ cup vegan milk (I suggest using a creamy milk like cashew or oat)
· 2 tbsp cornstarch
· natural food coloring (optional)
Coconut Streusel Topping
· a pinch of salt
· 2 tbsp flour
· 1 tbsp granulated sugar
· 1 tbsp shredded coconut
· 2 tsp vegan butter, melted
· 2 batches of our Vegan Cream Cheese Frosting
Preheat your oven to 350°F and spray two round cake pans with cooking spray.
In a medium bowl, combine all the dry ingredients and stir these ingredients together.
In a large bowl, combine all the wet ingredients and whisk together.
Add the dry ingredients to the wet ingredients and whisk until combined.
Divide the cake batter into the two prepared pans and bake the cakes for approximately 18-20 minutes or until a tester pick is removed clean from the center of each cake.
Once baked, remove cakes from oven and set on a cooling rack. After cooling for approximately 30 minutes (or until cake is only slightly warm and firm to the touch) carefully remove the cakes from their pans. Allow the cakes to cool further.
Add all of the lime curd ingredients to a small sauce pan in the order that the ingredients are listed. Whisk to combine.
Set saucepan over medium heat whisking frequently as the curd simmers. Remove curd from heat once it has thickened. Place into a container, seal, and set in the fridge for at least 30 minutes.
Coconut Streusel Topping
Preheat oven to 375°F and line a medium size baking sheet with parchment paper, set aside.
In a small bowl whisk together salt, flour, sugar, and shredded coconut. Add melted vegan butter and whisk until thoroughly combined.
Spread streusel onto the prepared baking sheet and bake for approximately 15 minutes or until golden brown, stirring every 5 minutes. Remove from oven and allow to cool for approximately 10 minutes.
Cream Cheese Frosting
Prepare 2 batches of our Vegan Cream Cheese Frosting.
Place in a container and set in the fridge until you are ready to assemble your cake.
Place one cake on a cake plate. On the outer edges, pipe or dollop a thick ring of cream cheese frosting.
Within the ring of cream cheese frosting, evenly spread all of the lime curd.
Top with the other cake and a generous layer of frosting. Top the cake with the coconut streusel. Serve and enjoy!
