There are certain cookies that are just the perfect cookies for any get together or celebration throughout the year, these are definitely the cookies! If you have a sophisticated tea party, everyone would love to nibble on these, especially with little side sandwiches like our Chickpea Salad Sandwiches. Or, if you are heading to a spring BBQ, make up a batch of these Lemon Thyme Shortbread! Taylor brought these when our family celebrated Christmas. We all love having shortbread during the holidays, and the thyme is very warming and felt festive for the holidays.

Vegan Lemon Thyme Shortbread Recipe


 

Lemon Thyme Shortbread

Vegan

 

Yield: approximately 20 medium cookies

Prep time: 10 minutes

Bake time: approximately 13-15 minutes

Ingredients


1 cup vegan butter, thawed to room temperature (I use Vegan Becel Margarine)

1 cup powdered sugar

1 tsp vanilla extract

1 ¾ cups all purpose flour

2 tsp lemon zest

2 tsp fresh thyme leaves


 

Method


  1. Preheat oven to 300°F, line a baking sheet with parchment paper, and set aside.

  2. With an electric mixer, beat the vegan butter, powdered sugar, and vanilla extract until light and fluffy.

  3. Add flour, lemon zest, and thyme leaves, and gently beat together until combined.

  4. Place dough in between two large pieces of parchment paper and roll dough until ¼ inch thickness.

  5. Using either a cookie cutter or a cup, cut out cookies and place them on your prepared baking sheet. Bake for approximately 13-15 minutes or until set.

  6. Once baked, transfer cookies to a cooling rack and allow to cool before serving. Enjoy!
