Trail Mix Breakfast Cookies

I am so excited about these Trail Mix Breakfast Cookies! I have mentioned in previous posts that my fiancé, Devin and I are very outdoorsy people. So naturally trail mix is a go-to snack for camping trips or hikes. However, we both get pretty bored of eating handfuls of nuts every weekend we go away. So, these cookies are the perfect adventure day snack! They taste incredibly delicious, but are packed with healthy protein that keeps you fueled for the day.
There are so many essential nutrients found in these cookies to keep you healthy and energized while spending some time in nature. But when you are eating these they don't taste like cardboard energy bars or bland nuts, these taste like you are eating dessert!

Trail Mix Breakfast Cookies
Yield: approximately 12 medium cookies
Prep time: 5 minutes
Bake time: approximately 11-13 minutes

Ingredients
· 3 ripe bananas
· ¼ cup natural peanut butter
· 1 cup quick oats
· ¼ cup all purpose flour
· 2 tbsp raisins
· 2 tbsp vegan chocolate chips
· 2 tbsp chopped peanuts
· 2 tbsp sunflower seeds
Method
Preheat oven to 375°F and line a large baking sheet with parchment paper. Set baking sheet aside.
Mash bananas with a fork. Add to a large bowl along with all of the other ingredients.
Mix thoroughly and scoop onto the prepared baking sheet.
Bake for 11-13 minutes or until firm and slightly browned.
Once baked, remove from oven, allow cookies to cool for a few minutes and then transfer cookies to a cooling rack. Repeat the last two steps until you have baked all of your cookies.
