Easy Vegan Breakfast Cookies

These cookies use simple, nutritious ingredients to create an easy to make breakfast or snack!



There is something so special about a breakfast that you can prep ahead of time! I am not a morning person at all, so I am often running out the door each day. My priority is always brewing a coffee at home rather than organizing breakfast. However, I will often start working and after about an hour I realize I am super hungry!



I have a habit of eating the lunch I packed for my work day by 9:30 a.m. since I can't make it all the way till lunch with just eating a snack on my first break. However, these Easy Vegan Breakfast Cookies are my current obsession and a lifesaver at work! They are incredibly quick to make and include ingredients I always have in my pantry.



I have been baking these Easy Vegan Breakfast Cookies on the weekend so that throughout the week I can pack a couple cookies for each morning that I am running out the door. Finally, I am not scarfing down my lunch first thing in the morning. I can eat these hearty and delicious cookies with my morning coffee and survive waiting until a normal time to be eating my usual lunches of Jalapeno Mac & Cheese or Mushroom & Lentil Shepherd's Pie!

Easy Vegan Breakfast Cookies

Yield: approximately 10 small cookies

Prep time: 5 minutes

Bake time: approximately 11-13 minutes

Ingredients


· 2 ripe bananas

· ¼ cup natural peanut butter

· 1 cup quick oats

· ¼ cup all purpose flour

· 1 tsp cinnamon

· ¼ cup vegan chocolate chips (you can substitute raisins or dried cranberries)



Method



  1. Preheat oven to 375°F and line a large baking sheet with parchment paper. Set baking sheet aside.

  2. Mash bananas with a fork. Add to a large bowl along with all of the other ingredients.

  3. Mix thoroughly and scoop onto the prepared baking sheet.

  4. Bake for 11-13 minutes or until firm and slightly browned.

  5. Once bake, remove from oven, allow cookies to cool for a few minutes and then transfer cookies to a cooling rack. Repeat the last two steps until you have baked all of your cookies.

  6. Eat and enjoy!
