Spicy Cauliflower Sandwiches
Crispy, spicy, savory, and delicious: this easy vegan air fryer recipe is the perfect weeknight comfort food!
Taylor and I both have a huge sandwich obsession! So, this is the perfect recipe for us! Most days when I get home from work I am so hungry, so I make a second lunch. This is a normal thing that everyone does...right??? I do not understand how some people can just have a snack and be satisfied until dinner!
My second lunch is almost always a sandwich, and I am so excited for this Spicy Cauliflower Sandwich to join the rotation of daily sandwiches! On the days when my second lunch consists of warmed up leftovers, then that usually means my husband and I are having sandwiches for dinner. Thankfully he loves sandwiches as much as I do!
For Christmas, my husband and I got ourselves an air fryer. Which means I don't have to constantly borrow someone else's when I am craving our Crispy Artichoke Hearts with Vegan Garlic Mayonnaise or our Crispy Pickles with Creamy Horseradish Dipping Sauce! It also means that I can make this tasty sandwich any time I like!

Spicy Cauliflower Sandwiches

Yield: 4-6 sandwiches

Ingredients
Spicy Cauliflower
· 1 head of cauliflower, sliced
· ½ tsp salt
· ¼ cup vegan mayonnaise
· ⅓ cup hot sauce (I used Louisiana Hot Sauce)
· ¾ cup panko breadcrumbs
· 4-6 hamburger buns*
· Vegan mayonnaise (to spread on the buns)
· Lettuce
· Sliced pickle
Method
Preheat your air fryer to 450°F.
Sprinkle salt evenly over the sliced cauliflower.
Mix the hot sauce and vegan mayonnaise together in a medium bowl.
Pour breadcrumbs onto a separate medium plate.
With one hand, gently dunk each piece of cauliflower into the mayonnaise mixture, allowing the excess to drip off. With your other hand, coat the cauliflower piece in breadcrumbs and place in your air fryer. Continue this step until you have breaded all of your cauliflower.
Air fry for approximately 25 minutes, gently flipping your cauliflower after 15 minutes. If you have a small air fryer, you may have to cook the cauliflower in batches. Your cauliflower is done once it has evenly browned all over.
Serve on hamburger buns with vegan mayo, lettuce, pickles, and some extra hot sauce. Enjoy!
Note:
* A large cauliflower will yield enough cauliflower for approximately 6 sandwiches, while a smaller cauliflower will only make enough for about 4 sandwiches.
