Double Chocolate Muffins

These gooey Double Chocolate Muffins are exactly what any sweet tooth needs. One or two of these muffins will satisfy my chocolate cravings in a heartbeat.
These muffins are the perfect dessert, afternoon snack, or breakfast - since anything that is classified as a muffin is considered a breakfast food to me!

They remind me of being in university and going to the local coffee shop to buy a latte and muffin in between lectures. However, ever since I became vegan I struggled to find delicious sweet snacks at coffee shops that weren’t oatmeal or flax muffins. Don’t get me wrong, I love those types of muffins but when I need a chocolate-y boost in the middle of a busy day, these incredible Double Chocolate Muffins are exactly what I am looking for.

Process:
I love this recipe because its so easy and so delicious! I begin by preheating my oven to 350°F and spraying a muffin tin with cooking spray. Then I simply sift all my dry ingredients in one bowl and measure all my wet ingredients in another bowl. I pour my dry ingredients into my wet ingredients and whisk them together until just combined. I measure my chocolate chips and fold them into my muffin batter with a spatula.
If you are like me and tend to over scoop your chocolate chips (yum), you may need a second muffin tin because your recipe might make up to 15 muffins.
I scoop the muffin batter into the prepared muffin tin until it is just below the top rim of the muffin tin. I bake the muffins for 18 minutes.
Your bake time may vary depending on your muffin so be sure to always check with a tester pick; your muffins are ready once the tester pick comes out clean!
I allow the muffins to cool while still in the muffin tin, on top of a cooling rack until they have firmed. I then gently remove them from their tins and let them cool completely on the cooling rack. Finally, I eat the entire batch in one sitting and make them again!

Ingredients
Dry Ingredients
· 1 ¾ cups all-purpose flour
· ½ cup cocoa powder
· 1 tbsp baking powder
· ¼ tsp salt
Wet Ingredients
· 1 cup vegan milk (I use unsweetened soy milk)
· 1 cup granulated sugar
· 1 tsp vanilla
· ¾ cup vegetable oil (or any other neutral tasting oil)
· 1 cup vegan chocolate chips
Method
Preheat oven to 350°F. Spray muffin tin with cooking spray.
Sift all dry ingredients in a medium bowl.
Combine all wet ingredients in a large bowl.
Add dry ingredients to wet ingredients and whisk until just combined, batter will be lumpy.
Fold in chocolate chips.
Pour batter into prepared muffin tin and bake for 18 minutes. Remove muffins from oven once a tester toothpick comes out of the center clean. Immediately after removing from the oven, place the muffins, while still in their muffin tin, on a cooling rack.
Once muffins have cooled (approximately 20 minutes), remove muffins from muffin tin and place muffins on cooling rack to cool completely. Eat and enjoy!
