Too often do I stumble upon recipes that claim simplicity but are actually just bland. This potato soup is savory and creamy, with a slight sharpness from the dijon mustard and nutritional yeast. Add a healthy dose of one (or all) of our recommended toppings and you'll find yourself craving this soup on any chilly day.

Creamy Potato Soup with Tofu Bacon Bits

Ingredients
Creamy Potato Soup
· ½ cup vegan butter
· 1 finely chopped onion
· 1 tsp dijon mustard
· 4 minced garlic cloves
· 1 tsp salt
· 1 tsp pepper
· ¼ cup all-purpose flour
· 4 cups mushroom broth (or vegetable broth)
· 4 cups diced yellow potatoes
· ¼ cup nutritional yeast
· 2 cups unsweetened non-dairy milk
Optional Toppings
· Sliced green onions
· Vegan sour cream
· Vegan shredded cheese
Method
In a large pot melt vegan butter over medium-high heat. Once butter is heated, add chopped onion and sauté until onions are soft and translucent.
Once onions are soft, add dijon mustard, garlic, salt, and pepper. Sauté for one minute, stirring constantly.
Add flour and stir constantly for another minute or two to cook the flour. While continuing to stir, slowly add mushroom broth. Add diced yellow potatoes, nutritional yeast, and non-dairy milk. Cover with the lid slightly ajar and allow to simmer, stirring occasionally, for approximately 45 - 55 minutes or until the potatoes are fork tender. If the soup comes to a rapid boil, reduce the heat to medium or medium-low.
While the soup cooks, prepare the Tofu Bacon Bits and set aside until the soup is ready to be served.
Transfer half of the soup to a blender, blend until smooth, and return back to the pot (alternatively, you may use an immersion blender). If you prefer a completely smooth soup, simply blend all of the soup. You may have to blend in batches.
Serve with Tofu Bacon Bits on top and any of our recommended optional toppings.
